Crab Cakes Benedict

A delicious twist on the classic Eggs Benedict.


About this recipe

The recipe for Maryland Crab Cakes has been a part of my collection since we lived there in 1970.  We discovered the delightful experience of enjoying fresh crab for breakfast much more recently, thanks to our son, who suggested it.

Ingredients - for four portions

  • 4 eggs
  • 4 slices crusty bread, toasted
  • 12 fresh spinach leaves, washed with stems removed
  • ½ recipe for Maryland Crab Cakes
  • Hollandaise Sauce
  • white vinegar
  • paprika

Directions

  1. Prepare a half recipe of Maryland Crab Cakes.  For four people, use a half-pound of crab meat.
  2. The crab cakes will cook in 10 minutes, the eggs in 5 minutes, and the toast in 2 or 3.  Start each accordingly so that all three are ready at the same time.
  3. Bring a large pot of water to a boil, add 2 tablespoons vinegar, and reduce the heat so that the water is barely boiling. 
  4. Begin sautéing the crab cakes in extra virgin olive oil.
  5. Carefully break each egg into a separate small bowl.
  6. When the crab cakes are turned at the five minute mark, carefully place the eggs in the lightly boiling water.
  7. Begin toasting the bread.
  8. Place the toasted bread slices on individual serving plates.  Add two or three spinach leaves.
  9. Place a crab cake on each bread slice.  Add more spinach leaves.
  10. Using a slotted spoon, transfer the poached egg to top of the spinach leaves.
  11. Finish with a generous portion of Hollandaise Sauce and a sprinkling of paprika.  Garnish with more spinach.

Notes

  • Any bread, or an English muffin, can be used in place of the crusty bread.
