Fruit Pizza

This one is special for extra-special reasons.  It was created by my oldest granddaughter!

About this recipe

After an evening of pizza-making with our daughter, son-in-law, and their three now teenagers, the eldest said, "Grandpa, why can't we make a pizza using fruit?  We will need an apple, a pear, some blueberries, and some jam!" 

Of course, it was a huge success and we have been inviting our pizza guests to create their own dessert pizzas ever since.

Ingredients

  • Pizza Dough
  • apple
  • pear
  • blueberries
  • cherry preserves
  • light brown sugar

Directions

  1. Roll out the pizza dough to an 11-inch circle and place it on a pizza pan.
  2. Spread a light layer of cherry preserves on the dough.
  3. Decorate the "pie" with pieces of the fruits.
  4. Sprinkle with the brown sugar.
  5. Bake at 500° F for about 15 minutes, or until the preserve is bubbling and the fruit begins to caramelize.

Notes

  • It is probably obvious, but any firm fruit will work as well as the apples and pears.  Similarly, any jelly, jam, or preserve can substitute for the cherry preserves.
  • For wood-fired oven enthusiasts: wrap the pizza in aluminum foil and place in a 700° F to 800° F oven for 10 to 12 minutes until the dough has set.  Uncover and return to the oven until the fruit is bubbly and begins to char slightly.  Let cool completely before serving.
