Cheese Fondue with Apple Cider

A non-alcoholic version of the classic Cheese Fondue.

The apple cider gives this Cheese Fondue a sweetness that complements the cheeses perfectly.

Ingredients

  • 8 ounces Emmentaler or Swiss cheese, grated
  • 8 ounces Gruyere cheese, grated
  • 1 tablespoon cornstarch
  • 2 ounces unsalted butter
  • 2 tablespoons shallots, minced
  • ¾ cups apple cider
  • ¼ cup water
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Directions

  1. In a medium bowl, toss the cheeses with the cornstarch to coat.
  2. In a heavy medium saucepan, melt the butter over medium heat.  Add the shallots and cook, stirring, until soft, 1 minute.
  3. Add the cider, water, and lemon juice and bring to a simmer.
  4. Reduce the heat to medium-low and add the coated cheese in 3 additions, stirring constantly and adding more cheese as the previous addition has melted.  Once all the cheese has been added, add the salt and pepper and stir.
  5. Remove from the heat and pour into a fondue pot for serving with your favorite crusty bread, fruits, and vegetables.

Notes

  • Cheese Fondue is served traditionally with chunks of crusty bread, apples, pears, and a selection of vegetables (such as broccoli and cauliflower).
