Cheese Fondue

A classic dish that can be served almost anytime.


About this recipe

With or without a fondue pot, this is one of those special treats that always stimulates lively conversation and creates plenty of action around the table.

Ingredients

  • 8 ounces Gruyere cheese, grated
  • 8 ounces Swiss cheese, grated
  • 1 clove garlic, crushed
  • ½ cup dry white wine
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons Kirsch
  • freshly grated nutmeg
  • freshly ground black pepper

Directions

  1. Rub the inside of a fondue pot or saucepan with the crushed garlic clove.  Discard the garlic. 
  2. Add the wine and bring to a simmer.
  3. Dissolve the cornstarch in the water and whisk into the wine. 
  4. Add the lemon juice, bring to a boil, and cook for 2 minutes. 
  5. Reduce the heat to low and whisk in the cheese a little at a time. 
  6. Stir in the Kirsch and season with the nutmeg and pepper.
  7. Enjoy immediately!

Notes

  • Cheese Fondue is served traditionally with chunks of crusty bread, apples, pears, and a selection of vegetables (such as broccoli and cauliflower).
