Wisconsin Walleye

Fresh water fish of all kinds are popular everywhere, and recipes abound.  This one is authentically Wisconsin!

About this recipe

During my business career I had several opportunities to visit northern Wisconsin.  Although I am not a sportsman, and certainly not a fisherman, I have actually caught a few walleye over the years.  During those visits to Wisconsin I frequented a lodge near Rhinelander.  The chef there shared his recipe with me.

Ingredients

  • ½ pound fresh Wisconsin walleye per person, filleted
  • 2 eggs
  • 1 cup flour
  • 1 cup Ritz cracker crumbs
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil

Directions

  1. Carefully separate the egg yolks from the egg white.  (The egg yolks will not be used in this recipe.)  Combine the flour, cracker crumbs, salt, and pepper.  Mix well.
  2. Wash each walleye fillet in the egg white and then coat with the flour mixture. 
  3. Sauté in the olive oil over medium heat for three to four minutes on each side.

Notes

  • This recipe will work with almost any fresh water fish.
  • I often add a half teaspoon of cayenne pepper to the bread and flour mix to add a little zestiness.
