Waffles

This recipe originally appeared in "The Joy of Cooking", by Irma S. Rombauer and Marion Rombauer Becker (on page 241 in the 1975 edition).


About this recipe

I have been making waffles for decades, always "losing" the first one to over or under cooking.  A few years ago I was "introduced" to this recipe in the book referenced above, a book that had been in my library for decades.  Every waffle since has been perfect.

Ingredients

  • 9 ounces cake flour
  • 2 teaspoons double-acting baking powder
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 3 egg yolks
  • 7 tablespoons melted unsalted butter
  • 1½ cups whole milk
  • 3 egg whites

Directions

  1. Combine the dry ingredients in a large bowl.
  2. In a separate bowl, beat the egg yolks well.  
  3. In a third bowl, beat the egg whites until stiff, but not dry.
  4. Add the egg yolks, milk, and melted butter to the flour.  Combine them with a few swift strokes of a wire whisk.  The batter should have a pebbled look.
  5. Add the egg whites and fold them into the batter until they are barely blended.

Notes

  • Cooking times will vary depending on the type of waffle iron used.  My electric waffle iron requires exactly 4 minutes.
  • Optionally, frozen, fresh, or dried fruit, berries, raisins, chopped nuts, or grated chocolate can be sprinkled over the batter after the batter has been poured onto the waffle iron.
