Turkey Tetrazzini

One option for using any left-over turkey after that Thanksgiving Day feast!


About this recipe

Despite its Italian sounding name, Tetrazzini is an American concoction usually prepared with diced meats or fish (often from another meal), cheese, pasta, and occasionally diced vegetables.  A quick search of the web produced recipes from every source imaginable.  This is the one Grandma Karen uses, so I know it makes a delicious meal.

Ingredients

  • 1 recipe Cheese Sauce (see Directions, Step 2)
  • ¼ cup cheddar cheese, grated
  • 1 tablespoon unsalted butter, melted
  • 2 cups cooked turkey, diced
  • 12 ounces angel hair pasta
  • ½ cups unseasoned bread crumbs

Directions

  1. Preheat the oven to 350° F.  Spray a three-quart baking dish with cooking spray.
  2. Prepare the Cheese Sauce.  The Parmigiano-Reggiano - Cheddar combination used in the recipe is recommended, but any grated cheese or combination of cheeses can be substituted
  3. Cook the angel hair pasta for about four minutes (or until cooked, but still firm) in two quarts of boiling, salted, water.  Drain and transfer to the coated baking dish. 
  4. Pour half of the sauce over the pasta, and mix thoroughly.  Cover with the turkey; and then pour the remaining sauce over the turkey. 
  5. Mix the bread crumbs with the melted butter and the extra ¼ cup of cheddar (or other) cheese.  Sprinkle over the top.
  6. Cover with aluminum foil and bake at 350° F for 45 minutes, or until hot and bubbly.

Notes

  • Let the casserole rest for about 10 minutes before serving.
