Sticky Toffee Pudding

Ingredients

  • 6 ounces dates, pitted and chopped
  • 10 ounces water
  • 1 teaspoon baking soda
  • 2 ounces unsalted butter
  • 6 ounces Baker's sugar
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 10 ounces heavy cream
  • 2 ounces confectioner's sugar
  • 2 teaspoons molasses

Directions

  1. Boil the dates in the water until they are soft.
  2. Add the baking soda.
  3. In a small bowl, cream the butter and sugar together until they are light and fluffy.
  4. Add the eggs and beat well.
  5. Mix in the dates, flour, and vanilla.
  6. Pour the mixture into a greased baking pan and bake in a preheated 425° F oven for 30 to 40 minutes, or until it is just firm to the touch.
  7. To prepare the sauce, place the the cream, confectioner's sugar, and molasses in a small pan and place over low heat.  Stir together until it is well blended and then bring it to a boil.
  8. Pour over the dates and serve immediately.
