Steak Fajitas

Flat Iron Steak is the key ingredient.

I readily admit I know little about Mexican cuisine, or about the proper way to prepare a fajita.  I do know that it typically involves grilled beef steak and a selection of grilled or sautéed onions and peppers.  Armed with that information, and having recently learned the attributes of flat iron steak, I offer my version of the Steak Fajita.  The steak marinade is distinctly Asian, but the final result is distinctly delicious!

Ingredients

  • flat iron steak (see Notes)
  • onion, sliced
  • red bell pepper, sliced
  • Anaheim pepper, sliced
  • soft tortillas
  • soy sauce
  • dry sherry
  • Hoisin sauce
  • Fish sauce
  • Sriracha hot chili sauce
  • extra virgin olive oil
  • kosher salt
  • freshly ground black pepper

Directions

  1. Place the steak in a plastic bag.  For each pound of steak, add 2 tablespoons of the soy sauce and sherry, and 1 tablespoon each of the Hoisin, fish, and Sriracha sauces.  Seal, and then massage the bag to ensure the marinade covers the meat.  Set aside, at room temperature, for two hours.  (See Notes.)
  2. Heat 3 tablespoons olive oil in a large sauté pan over medium heat.  Add the sliced onions and pepper.  Season generously with salt and pepper.  Cook until the vegetables are heated through and beginning to brown, but still firm.
  3. On a hot grill, cook the steak for 4 minutes on the first side, and 3 minutes on the second side (for medium rare, and again, see Notes).  Remove to a platter and let the meat stand for 5 minutes.
  4. On a cutting board, slice the meat across the grain.  Serve with tortillas warmed on the hot grill and the sautéed vegetables.

Notes

  • A pound of steak, one onion, and one of each of the peppers will serve two people generously.
  • The steak may be marinated longer than two hours, up to overnight.  If so, refrigerate the marinating meat until two hours prior to cooking time.  The meat grills best when it begins at room temperature.
  • Marinated hanger steak is extraordinarily tender and juicy, especially when served medium rate.
