Seafood Pasta

Fresh seafood and linguine make the perfect marriage!

All credit for this delicious recipe goes to some very special long time friends, Sue and Fred, who obtained it from their friend and professional chef, Tony!  I've never met Tony, but I extend my heartiest grazie mille for his wonderful creation.

Ingredients

  • 12 ounces linguine
  • 1 cup assorted mushrooms
  • 1 cup unsalted butter
  • 1 large tomato, seeded and chopped
  • 1 cup lobster, cooked
  • 2 cups shrimp, cooked
  • 1 cup lump crab, cooked
  • 2 tablespoons Italian parsley, roughly chopped
  • juice of 1 lemon

Directions

  1. Cook the pasta in boiling, salted water.  After about 5 minutes, reserve a half cup of the pasta water and set aside.
  2. The linguine will require at least ten minutes to cook.  During this time, sauté the mushrooms in 2 tablespoons of the butter. 
  3. Add the tomato and cook for 1 minute.
  4. Add the remaining butter and, when melted, add the seafood.  Cook until the seafood is warm.  About two minutes before the pasta is ready, add the lemon juice and parsley.
  5. When the pasta is al dente, drain and plate.  Add the reserved pasta water and gently toss the pasta.  Then pour the heated seafood over the top.
  6. Serve immediately.

Notes

  • Optionally, a large chopped shallot can be added while sautéing the mushrooms, and a tablespoon of chopped fresh chives can be added to the parsley.
  • Serves four.
