Sausage with Peppers and Onions

This was a staple in my childhood home.

Fortunately, everyone in my family has always enjoyed sausages with sautéed green peppers and onions.  For me, it not only provides a great meal, it provides me with treasured memories.  Of course, I prefer hot Italian sausage, but any sausage will do.  The sausages can be grilled or fried.  Either way, nothing could be simpler and tastier.  Oh, and don't forget the crusty Italian bread!

Ingredients

  • your favorite link sausage
  • green bell pepper, sliced
  • sweet onion, sliced
  • extra virgin olive oil
  • kosher salt
  • freshly ground black pepper

Directions

  1. Grill the sausages, or sauté them in olive oil over medium heat, until they are golden brown all around, but still juicy.
  2. In the same pan, or separately, sauté the peppers and onions in olive oil over medium heat until soft, but still slightly firm, 5 or 6 minutes.  Season with salt and pepper.

Notes

  • As mentioned above, any link sausage will work with this recipe.  If you are using frozen sausages, allow them to defrost before cooking.  Also, adding red or yellow bell peppers adds to the flavor and the presentation.
  • I generally assume 1 pound of sausage, 1 pepper, and 1 onion will serve 2 people generously.
