Roasted Red Peppers

You'll never buy another jar of roasted red peppers after you've tried this!

About this recipe

Amazingly simple and equally delicious.

Ingredients

  • whole red bell peppers, washed and dried
  • extra virgin olive oil
  • kosher salt

Directions

  1. Place one or more whole red peppers directly on the grates of a gas burner turned to medium.
  2. As the flesh begins to char (actually turn jet black), rotate the peppers with tongs until the pepper is charred completely, or about 10 minutes.
  3. Remove the hot charred peppers to a glass bowl and cover immediately with plastic wrap.  Allow the peppers to cool, about 10 minutes.
  4. When the peppers are cool, and using your fingers or a paper towel, peel off the charred skin.  Slice the peppers in half and remove the seeds. 
  5. Then slice the pepper halves into one-inch strips.  Arrange the pepper strips on a serving tray and drizzle with your best extra virgin olive oil. Sprinkle with kosher salt before serving.

Notes

  • After adding the olive oil, the roasted pepper strips can be refrigerated for several days before serving, either cold or at room temperature.
