Roasted Pears

Another recipe inspired by Chef Mario Batali!

Italians are famous for their delicious desserts, but many (maybe most) Italians actually prefer fruit, wine, and cheese over pastries.  This simple creation (by Chef Batali) includes all three, plus some sugar of course; can be readied for the oven in advance; and then can be baked to be ready for serving when dessert time arrives!

Ingredients

  • 4 large pears, Bosc or Anjou, not quite ripe, stems attached
  • 1 cup Chianti, or other dry red wine
  • 1 cup sugar
  • Parmigiano-Reggiano cheese

Directions

  1. Trim the bottom of the pears so that they stand up on their own. 
  2. In a small roasting pan, just large enough to hold the pears, place the pears upright. 
  3. Pour the wine and sugar into the pan surrounding the base of the pears. 
  4. Place in a preheated 400° F oven and cook until soft, about 40 minutes.
  5. To serve, place each pear in the center of a dessert dish and drizzle some of the liquid over each pear. 
  6. Using a peeler, shave shards of Parmigiano-Reggiano cheese over each pear, and serve.
