Roasted Eggplant Spread

Melanzane Arrosto in Italian!

About this recipe

Serve with your favorite cracker or crusty bread.

Ingredients

  • 1 eggplant, peeled
  • 2 red bell peppers, seeded
  • 1 red onion, peeled
  • 2 garlic cloves, minced
  • extra virgin olive oil
  • 1½ teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon tomato paste

Directions

  1. Cut the eggplant, bell peppers, and onion into 1-inch cubes. 
  2. Toss them in a large bowl with the garlic, olive oil, salt, and peppers. 
  3. Spread them on a baking sheet. 
  4. Roast for 45 minutes in a preheated 400° F oven, or until the vegetables are lightly browned and soft, tossing once during cooking. 
  5. Cool slightly.
  6. Place the vegetables in a food processor, add the tomato paste, and pulse 3 or 4 times to blend. 
  7. Season again with salt and pepper, if necessary.
