Roasted Acorn Squash

Simple, elegant, and delicious!

Squash has always been a favorite vegetable in our house, and roasting has always been my preferred preparation method because the squash flavors are intensely concentrated. 

Ingredients

  • acorn squash
  • extra virgin olive oil
  • kosher salt
  • freshly ground black pepper

Directions

  1. Cut the squash in half and remove the seeds.
  2. Drizzle the flesh with olive oil.  Then sprinkle with salt and pepper.
  3. Place inverted (skin side up) on a parchment paper lined baking sheet.
  4. Roast in a preheated 350° F oven for one hour.
  5. Finish with a dollop of butter.

Notes

  • Almost any squash can be substituted for the acorn squash.
  • Freshly ground nutmeg is a great addition to the dollop of butter.
  • A drizzle of Aceto Balsamico Tradizionale di Modena is an even better substitute for the butter and nutmeg!
