Pork Schnitzel

so known as Schweine-Schnitzel, Pork Schnitzel is a German classic and a personal favorite.

Schnitzels are a classic collection of German meat dishes that involve dipping meat medallions in flour, egg, and breadcrumbs; sautéing the meat in oil; and finishing with fresh lemon.  Popular schnitzel meats include veal (wiener),  turkey (puten), and chicken (hänchen).

I added the olive oil and Italian parsley!

Ingredients

  • 1 pound pork tenderloin
  • 1 cup all purpose flour
  • 1 cup unseasoned breadcrumbs
  • 2 eggs, beaten
  • juice of one lemon
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • kosher salt
  • freshly ground black pepper
  • 2 tablespoons Italian parsley, chopped

Directions

  1. Slice the pork tenderloin on a bias into medallions about one-eighth inch thick.
  2. Dredge each portion in flour, egg, and then breadcrumbs.
  3. In a large non-stick fry pan, sauté the pork in olive oil for 3 minutes per side.  Season each side with salt and pepper as the medallions cook.
  4. Add the butter, lemon juice, and chopped parsley. 
  5. Sauté for another minute, flipping the medallions one more time to ensure the butter and lemon sauce permeates both sides.
  6. Serve immediately.
