Pizza Blanco

I've mentioned before that I am privileged to have many relatives who excel at everything they do in the kitchen.  This particular cousin is one of the best.  She is the student of an equally talented mother, and of course, we share grandmothers!


About this recipe

Pizza Blanco, or white pizza, is another example of how easy it is to prepare a delicious pizza at home. 

Ingredients

  • 3¼ cups all-purpose flour
  • 1 cup water
  • 2 teaspoon sugar
  • extra virgin olive oil
  • 1 package instant yeast
  • 1 egg white
  • red onion, thinly sliced
  • kosher salt
  • freshly ground black pepper
  • dried rosemary leaves

Directions

  1. Mix the yeast and sugar in 1 cup of tepid water. 
  2. In an electric mixer fitted with a dough hook, combine the flour, 1 teaspoon salt, 1 tablespoon olive oil, the yeast mixture, and egg white.  Using the mixer, knead for about 5 minutes.
  3. Remove the dough and form into a smooth-skinned ball.  Oil lightly and place in an oiled bowl.  Cover and let rise until the dough doubles in size, 60 to 90 minutes.
  4. Remove the dough to a lightly-oiled baking sheet.  Using fingers and palms, work the dough from the middle to the the edges of the baking sheet.  Continue pressing the dough until a uniform thickness is achieved throughout.
  5. Brush the dough with olive oil.  Sprinkle onion slices , salt, pepper, and rosemary evenly on top.
  6. Bake in a preheated 450° F oven for 12 minutes. 
  7. Serve hot or at room temperature.
