Pasta with Broccoli Rabe Pesto

A delicious alternative to Pasta with Basil Pesto.


About this recipe

Broccoli Rabe is a slightly bitter vegetable that pairs very well with many foods, but especially grilled and roasted fish and meats.  Consequently, Pasta with Broccoli Rabe Pesto serves equally well as a main course or as an ideal starch and vegetable side.

Ingredients

  • ½ cup Broccoli Rabe Pesto
  • 8 ounces pasta (to serve two)
  • freshly grated pecorino Romano cheese
  • extra virgin olive oil

Directions

  1. Cook the pasta in boiling salted water until al dente. 
  2. In a large bowl, mix together the pesto and ½ cup of pasta cooking water.
  3. Add the drained pasta to the pesto, and toss well. 
  4. Finish with a drizzle of your best extra virgin olive oil and a generous sprinkling pecorino Romano cheese.

Notes

  • Any pasta can be used, but I prefer heartier sizes such as mostaccioli or rigatoni.
