Jalapeno Salsa

Fresh, colorful, and very tasty!

About this recipe

This double duty recipe works equally well as an appetizer served with your favorite cracker or salted chip, or as a topping for grilled fish, especially swordfish and tuna.

Ingredients

  • ½ cup dried tart cherries
  • ½ cup cherry preserves
  • 2 tablespoons red wine vinegar
  • ½ cup red onion, chopped
  • ½ cup yellow bell pepper, chopped
  • ¼ cup jalapeno peppers, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice

Directions

  1. Combine the dried cherries, cherry preserves, and vinegar in a small microwave-safe bowl and mix well.
  2. Microwave on high 1 to 1/½ minutes, or until hot.  Let stand 5 minutes.
  3. Stir in the red onion, yellow bell pepper, jalapeno peppers, cilantro, and lime juice. 
  4. Cover and refrigerate 3 to 4 hours or overnight before serving.
