Grilled Shrimp

If you like shrimp, this version will amaze you.

About this recipe

What do you get when you combine fresh garlic, fresh herbs, some extra-virgin olive oil, and freshly-shelled shrimp grilled to perfection?  One of the most delectable appetizers imaginable!

Ingredients

  • frozen shrimp in the shell
  • extra virgin olive oil
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh Italian parsley, chopped
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh basil, chopped
  • 6 cloves garlic, chopped
  • 1 lemon

Directions

  1. Let the shrimp thaw, but do not allow them to come to room temperature.
  2. Remove the shell and vein from each shrimp, rinse, and place in a plastic bag.
  3. Drizzle generously with olive oil, and add the garlic and herbs.  Mix thoroughly, and refrigerate for at least 1 hour (or up to 8 hours).
  4. Place the shrimp on a hot grill and cook for 3 minutes on each side, turning only once.  
  5. Remove to a heated serving platter and drizzle with freshly squeezed lemon juice.

Notes

  • I recommend using the largest, frozen, unpeeled, shrimp available.
