Greek Salad

Oregano is the key ingredient here.

About this recipe

Greek Salad is traditionally prepared without lettuce.  It is particularly delicious when the tomatoes, cucumbers, and onions are freshly-picked, so in Michigan it becomes a special summer treat.

Ingredients

  • 3 tomatoes, diced
  • 1 cucumber, diced
  • 1 onion, sliced and quartered
  • 4 ounces Greek feta cheese, diced or crumbled
  • Kalamata olives
  • ¼ cup extra virgin olive oil
  • 2 tablespoon white wine vinegar
  • 1 tablespoon dried oregano
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Directions

  1. In a large bowl, add the tomatoes, cucumber, onion, cheese, and olives.  Toss gently to mix the ingredients.
  2. In a separate bowl, combine the olive oil, vinegar, oregano, salt, and pepper.  Whisk vigorously.  Then taste, and adjust the seasonings if necessary. 
  3. Just before serving, pour the dressing over the salad.

Notes

  • Imported Greek feta cheese is not available everywhere, but I recommend that you try it if you can. 
  • Although this salad is traditionally prepared without lettuce, it works equally well with lettuce added.  I particularly like to use Romaine lettuce.
