Golden Chicken Breasts

We have been enjoying this deliciously simple meal for decades!

I have mentioned elsewhere that canned soups are not one of my favored ingredients.  Campbell's Golden Mushroom Soup, however, has been a recipe staple in my family for four generations.

This particular recipe, perfected by my wife, is too good not to include here.  As she proudly proclaims, "It's easy and elegant!"

Ingredients

  • 6 whole, boned, chicken breasts
  • 2 cans Campbell's Golden Mushroom Soup
  • 8 ounces fresh mushrooms, sliced
  • ½ cup sweet vermouth
  • unseasoned breadcrumbs
  • kosher salt
  • freshly ground black pepper

Directions

  1. Place the chicken breasts on a working surface and sprinkle generously with breadcrumbs.  Add salt and pepper to taste.
  2. Starting with the short side, roll the meat catching little side pieces inside the roll and making sure the seam is on the bottom.
  3. Place the chicken rolls in a shallow baking dish.  Mix the soup with the vermouth and mushrooms and pour it over the chicken. 
  4. Cover and bake for 90 minutes at 350° F.  Uncover for the last 10 minutes to baste the chicken and to thicken the sauce.

Notes

  • Serve with mashed or baked potato, buttered noodles, or rice, and your favorite vegetable.
  • Serves six.
