Garlic Potato Salad

About this recipe

We lived for many years in Naperville, Illinois, a city with many fine restaurants.  One of the best is Meson Sabika, which features Spanish tapas.  Grandma Karen and I have tried almost everything on their menu at least once, but their Garlic Potato Salad is one of our favorites.  This is their original recipe, published years ago in a Chicago newspaper.

Ingredients

  • 2-3  pounds small red potatoes
  • 2 ounces fresh garlic (approximately 6 cloves)
  • 2 cups Hellman's mayonnaise
  • 1 cup sour cream
  • 2 teaspoons yellow mustard
  • 1 tablespoon Italian parsley, finely chopped
  • ½ teaspoon ground white pepper
  • kosher salt

Directions

  1. Boil the potatoes until they are cooked, but still very firm.  Cool the potatoes quickly with cold water to prevent further cooking.  Then drain thoroughly, peel, and cut into one-half to three-quarter inch cubes.
  2. In a large bowl, add the mayonnaise and sour cream.  Using a garlic press, add the garlic (discarding any garlic pulp that does not pass through the press).  Then add the  mustard, white pepper (black pepper is an acceptable substitute, but only 1/8 teaspoon is required) and parsley.  
  3. Mix thoroughly.  Taste the mixture and add about ½ teaspoon salt, if necessary.
  4. Working in batches, combine the potatoes with the whipped mixture.
  5. Garnish with more chopped Italian parsley.
  6. Cover, and refrigerate overnight before serving.
