Creamy Chive Rolls

Very special for very special reasons!

About this recipe

Many of my relatives are (or were) very accomplished in the kitchen.  One particularly talented cousin won a Pillsbury Bake-Off Award with this recipe many years ago!

Ingredients

  • 1 packet Red Star yeast
  • ¼ cup water
  • ⅓ cup sugar
  • ⅓ cup shortening
  • ¼ cup Pillsbury mashed potato flakes
  • 1 cup scalded milk (cooled to lukewarm)
  • 1 egg, unbeaten
  • 4 cups Pillsbury flour
  • ⅓ cup chopped chives
  • ¾ cup cream
  • 1 egg, slightly beaten
  • salt

Directions

  1. Combine and mix the yeast and water in a small bowl and let stand.  In a large mixing bowl, combine the sugar, shortening, potato flakes, 1 teaspoon salt, and milk.  Add the egg, yeast mixture, and flour to form a stiff dough.  Knead the dough for 5 - 8 minutes.  Place in a greased bowl, cover, and let rise in a warm area (85° - 90°) for 60 - 90 minutes, or until it approximately doubles in size.
  2. Prepare the chive filling by combining the chives, cream, egg, and ½ teaspoon salt in the top of a double boiler.  Stir frequently until the mixture thickens.
  3. When the dough has risen, divide it into two equal pieces.  Roll out each piece on a lightly-floured surface to a 12 by 16 inch rectangle.  Spread with half the filling.  Roll up starting with the 16-inch side and cut into one-inch slices.  Overlap the slices on a greased cookie sheet to make an oval ring.  Repeat with the remaining dough.
  4. Let rings rise in a warm area (85° - 90°) for one hour or until they approximately double in size.  
  5. Bake at 350° for 20 - 25 minutes. 
  6. Serve warm.
