Cranberry and Orange Compote

Inspired by a similar sauce featured at The Ace restaurant in Toronto.


About this recipe

Cranberries pair well with many other fruits, but cherries and oranges are my favorites.  This one is distinctive because of the vanilla and cinnamon.  The flavors pair well with almost any roasted meat, but particularly well with roasted fowl.

Ingredients

  • 12 ounces fresh cranberries
  • 1 orange, peeled and roughly chopped
  • juice of 1 orange
  • ½ cup dark brown sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 6 slices orange zest

Directions

  1. Heat all the ingredients in a medium sauce pan over medium heat until the juices begin to boil.
  2. Simmer, uncovered, over medium low heat for 15 minutes, or until nearly all of the juices have evaporated.
  3. Remove from the heat.  Then remove the zest pieces and any remaining large pieces of orange pith or membrane.
  4. Refrigerate until ready to use.

Notes

  • To intensify the flavors, consider using a cinnamon stick and vanilla pod as substitutes for the ground spice and extract.
