Chicken Noodle Soup

In our extended family, this is everyone's favorite!


About this recipe

You know you have a very special recipe when your children – and then your grandchildren – ask for it every time they visit!  "Grandma, where's the Chicken Noodle Soup?" might one of the world's greatest compliments!

Ingredients

  • 1 tablespoon extra virgin olive oil
  • ½ cup onion, finely chopped
  • ½ cup carrot, finely chopped
  • ½ cup celery, finely chopped
  • 2 cups cooked chicken, cut into bite sized pieces
  • 2 tablespoons Italian parsley, chopped
  • ½ teaspoon thyme
  • 2 teaspoons kosher or sea salt
  • 1 teaspoon freshly ground pepper
  • 2 quarts Chicken Stock
  • 1 cup soup pasta, cooked (shells, alphabet, ditali)
  • 2 tablespoons all-purpose flour

Directions

  1. Sauté the chopped onion in olive oil until golden.
  2. Add the carrot and celery and continue cooking for 10 minutes.
  3. Add the chicken, herbs, seasonings, and all but one cup of the stock and simmer for 20 minutes.
  4. Mix the remaining cup of stock with the flour and add to the soup.
  5. Cook for an additional 10 minutes.
  6. Add the cooked pasta and warm through.
  7. Taste for flavor and season appropriately before serving.

Notes

  • If you add uncooked pasta to the soup it will adsorb too much of the chicken broth.  If you prefer to use uncooked pasta, just add more stock equal to the weight of the pasta, since pasta will absorb liquid equal to its weight during the cooking process.
  • If you make your own chicken stock, the chicken you reserve can be used in this soup.
  • Commercial chicken stock certainly can be used in this recipe.
