Candied Sweet Potatoes

My father created this one!

About this recipe

My dad's Candied Sweet Potatoes was a standard offering for every Thanksgiving Day dinner that I can recall – from the days of my early childhood to last year when my oldest granddaughter prepared them for the family!  Nothing could be simpler and at the same time be more delicious.  You won't be disappointed – although even I have never served them at any time except Thanksgiving and Christmas!

Ingredients

  • 4 pounds sweet potatoes (or yams)
  • 2 cups freshly squeezed orange juice
  • 1 cup brown sugar
  • ½ cup light corn syrup
  • ½ cup molasses

Directions

  1. Peal the yams and cut into halves.  Boil uncovered for 5 to 8  minutes, or until they are softened, but still firm.  Drain, cool, and cut into approximately equal-sized wedges, and place in a large, shallow baking dish.
  2. Combine the remaining ingredients and pour over the wedges (which should be mostly covered).
  3. Cook uncovered in a 450° F oven for 30 minutes or until the tops of the wedges begin to brown
