Baby Carrots with Mint Gremolata

These carrots not only taste good, they make a very impressive appearance!

About this recipe

Baby carrots make the best impression here, but any size carrot, cut any way you choose, will equally please your diners.

Ingredients

  • baby carrots, peeled
  • 2 tablespoons unsalted butter
  • kosher salt
  • freshly ground black pepper
  • 1 tablespoon lemon zest, minced
  • 1 tablespoon light brown sugar
  • 2 teaspoons fresh mint, minced

Directions

  1. Boil or steam the carrots for 5 minutes.
  2. Melt the butter in a large skillet over medium-high heat.  Add the carrots and sauté for 3 minutes, or until softened.  Season with salt and pepper.
  3. Combine the zest, sugar, and mint and sprinkle over each serving of carrots.
